Is ther a better way to secure the track to the foam insulation board besides pulling it all up and glueing it?
Wish I could give you a definitive answer on that one. I embed mine in joint compound. A method I’ve seen used is put adhesive caulk along the edges and stick it down that way.

I would think that if you have your track all in place with nothing holding it you could gently lift a short section at a time and spread a thin layer of latex cauld along each side. Press the track down into the caulk. Then do the next section. You wouldn’t have to be too careful about spreading the layer for as Jeff says a bead along the edge would do and probably not look too bad. The thing about spreading a thin layer along under the track is that it dries slowly and you could adjust your track back in place after you had gone quite a way down the track. I have had good luck with the latex caulk under track and roadbed and have seen other posts that have said they used it for E-Z Track and Uni-Track.
