Well, pretty sure I know the answer, but are cattle (stock) cars still utilized in any railroads currently, or are the cattle generally just shipped via truck/trailer?

Not in the United States or Canada. The last I am aware of in the U.S. was UP hog movements from Iowa/Nebraska to Los Angeles that ceased in 1994-95. (There’s still Barnum & Bailey Circus Train but that’s not quite the same thing!)
