Welcome to the forums.
Many roads had their own colors and color schemes for their buildings, some even varied colors on different branch lines.
I’d suggest you check with the historical societies of the roads you are modeling to get the best information.

“Cowman” is right on. Most all of the RRs have / had very definitive specs for their structures, including color schemes.
Most all of the RRs have historical societies and they are always willing to help. Actually, if you are truly interested in a specific RR, I urge you to join their particular society.
I’ve been a member of the Santa Fe and the Illinois Central societies for well over 30 years each, and they have greatly enhanced my enthusiasm and knowledge of these roads.

If you’re modeling poor areas of Appalachia and no particular RR line, all-white would be a safe bet. And, dingy, sooty white would be most appropriate. If you are modeling a particular line, google their historical society, as suggested. They will generally have pics or information on paint schemes.
