I have several flat cars with metal stake sides what would be a suitable load for one of these? I was thinking maybe rough cut logs any other ideas? Thank you in advance.

Try steel rail, pipe culvert, large cement pipes, it almost looks like anything that fits on the car will do.
BBF (before bulkhead flats) - stacked lumber and squared timbers.
Not logs. The stakes were usually whatever scroungy pieces of wood that were handy, and a shifting log would snap them like toothpicks.
For that matter, cut pieces of flat-side toothpicks make pretty convincing stakes in HO.
I put stacked logs on one of mine, a tarp covered crate on another and left one without any load at all. There’s so many possibilities that trying to name them all would take all day…
