What height are most flatcar platforms in kits (relative to track)?
Are platforms the same elevation as a flatcar with or without roadbed under the track?
I always make mine the same height as the flat car deck. So i rais or adjust according to if there is road bed present or not.

Freight platform height should be close to car floor height, usually a tad lower (2 - 3 inches) to accommodate a standard dock plate to give forklift access to the lading. This is true of all kinds of loading docks, even those for (fill in the adjective) 18 wheelers.
