I think I’d like to try my hand at building one of those Ambroid kits. I’m thinking a box car or a caboose would be cool. I did a search but found nothing, is there a web site for these kits? Are they even still in production?

No they are out of production since a long time, I think for 20 years or more. But on ebay you will always find a variety of these kits. I got mine there. AND I LIKE THEM VERY MUCH! Instructions are very fine, and you can decide about the grade of detail. If well built (and with up to date grab iron replacements) they easily rival brass cars!
Simply tip in ambroid in the scale you are modeling (not “ambroid H0” - this always excludes many search results, but I mean go to the category of your scale and then simply use ambroid.
If you are into fairly modern stuff you might want to try one of these kits:

or
Both companies make excellent multi media models.
I hope you get well soon!
