I came across this real company in Echo, Oregon in 1903. I can only wonder how long it lasted. But, with generous fiction, it might be added as an industry to a small western town of an earlier or later era.
American Hare Packing & Cold Storage Company - Echo, Oregon 1903
According to a old news report:
On April 14, 1903, it was reported that a new enterprise was waking to life in Echo, the booming little town 31 miles below Pendleton. "Here what promises to develop into one of the biggest establishments of the state is being started. “The derided idea of a jack rabbit cannery has actually materialized and the enterprise is now fairly under way. The American Hare Packing & Cold Storage Company has been organized to develop the industry.”
