Is there any reason that Cat5 cable could not be used for making loco net cables if you just don’t use 1 pair of the wires?

Nope. I’ve used it many times. I used the extra pair to carry 12V power to the UP panels.
I have access to a ton of free CAT 5. Are you saying that you can just plug it in to extend the loconet or do you have to do something to it to disable the extra pair?
I am not saying that. I use CAT5 cable (the cable itself, not patch cords) and crimp on the 6 pin connectors. That leaves an extra pair of wire free for use or you can clip it off. In some cases I separate it out and use it for carrying 12V to the UP panels. You can add a power connector for the UP5 input.
Thanks jbinkley60… like you I have access to Cat5 cable and thought it was foolish to have tp spend more money if I already have cable on hand that will work…
Thanks again!!!
