Track centers can be anything one chooses, adding short straight pieces or often by trimming turnouts in the crossover slightly to fit for tighter centers.
Note that the NMRA recommendation for N scale track centers for tangent (straight) track is 1 1/32", according to NMRA S-8. This is less than 1.25". In fact, many of the recommendations there for different combinations of equipment and radius are significantly less than 1.25".
That’s probably “why”.
