I recently purchased an New Haven 4-6-2 I-4e and am wondering what passenger cars I could throw behind it.

There is a New Haven Historical Society and forum. Maybe you could post your question there and get some help?
There are a few issues of their modeling magazine available as a .pdf by clicking on the menu at the right of their main page.
This issue has a review of the Rapido Osgood Bradley coaches which would probably have been prevalent in the late steam era along with a mix of heavyweight head-end, Pullmans, diners and coaches. Quite a few through trains carried the ubiquitous PRR P70 (Broadway Limited) coaches, too.

The New Haven was also closely tied with the PRR and many of the trains from the south probably carried through cars north to Boston.
Doing a Google search for images of New Haven passenger trains would also get you some insight.

For the most part, I’ll happily defer to those who know tye NH better than I do. But for the head end, I’m sure you’d be safe to use PRR B60 baggage cars (Walthers or Bethlehem Car Co. or brass), R50B Express reefers (Walthers, brass, & maybe others), and X29 Express boxcars (the ones with the special REA lettering — they were produced by Red Caboose and probably others). New Haven did an awful lot of business in cooperation with PRR.
