I currently have a total of 4 straights and 8 curve track pieces. What type of table might you recommend for a train layout of this size?
Start with a 4’ x 8’ table; there are many good track plans on the internet.
Depends on what track system and curve radius you have.
But with these numbers you will only get a simple oval so go with whatever size table you can build. You will most likely add-on in the future, so I would not attach the track to the table.
Assemble your oval, with or without a straight in the “short” curve, then measure it adding 6" to the outside if you can to keep the trains on the table in case of a derailment

Currently, as stated previously, you have enuff for a small loop but this site, http://www.thortrains.net/ , will give you lots of examples of what can be set-up in a small area. Even if you don’t use one directly it can be a source of inspiration for creating your own.
How about CCCSCSSSCCCSCSSS, where C is a curve, always in the same direction, and S is a straight? This is a kind of lopsided loop that will fit on a 4-by-8-foot (or shorter) board using O27, O31, or O36 Fastrack. It might look a little more interesting than a more-symmetrical oval. The outer dimensions of the loops are
O27–34 x 60 inches
O31–38 x 68 inches
O36–47 x 77 inches
