I’m planning to have a harbor on my next layout and one of the structures I would like to model is a boat builder. I’ve searched several actual businesses on the web but few have any decent photos of how they look next to the waterline. I believe most would have a ramp launch and/or overhead crane.
im looking for any suggestions on prototype locations or potential building kits (I’m working in N) that would suffice.

Look for model rainroader John Ellwood. There is a commercial video on his layout. And he loves boats. Sonhe has a shipbuilder on his layout modeled after one in ConnecticuT. The layout video goes into detail bout the builder and his version. That would be very helpful in your planning. Might even be able to find it on the tube of you. I do believe the video was made by Fosscale models which does have a website
