SP is the only railroad I know of which ran unit trains of sugar beets. So that would be my guess.

CNW ran trains of sugar beets out of BelleFourche,SD at one time. Not sure if they were unit trains,though.

I’ll go along with the others and say sugar beets. Railroad slang can be quite picturesque and a nickname like that goes along with the commodity quite well.
