I have seen a few photos purporting to be from 2006 on Railpictures.net of UP SD40T-2s (rebuilt SD45T-2s). The UP roster at utahrails.net claims that all of them were retired in 2003. Have some been brought back into service?
I see one almost every day here in the Brigham City yard. Maybe it is retired but still has to work to pay the medical insurance. Kind of hard for a locomotive to be a greeter at Walmart!

I still see them out here but they are getting rare.
I saw one last month in Bloomington IL, in UP colors but with the letters for a lease company (not sure which one).
Utahrails shows most of the units above 2880 still active.

I saw SD40T-2 #8788 three days ago in Mesa, wearing a fresh coat of UP armour yellow and the leading unit on a drag.

I saw one at Belvedere, IL on Sunday evening – no pictures though, the rain pretty much put a stop to any such thoughts!
We sent a train down to St. Louis powered by a Dash 9 and three (count them–three!) Tunnel Motors about a week ago. I heard that a couple of days before that this same train had just three tunnel motors–one each in UP, SP, and D&RGW paint schemes.
They’re still out there!
There are a few of them out of Roseville in local duties. They come in both flavors patched and full paint.

I saw UP 2844 today. A few months ago, someone posted that they did not see these locomotives on UP’s roster; I have seen several since then. Perhaps their omission in the roster is the cause of what you read.
Second-hand tunnel motors have turned up on DMIR, B&LE, KCS, Rail America, Helm and others. UP is an interesting situation, they still have a fair number of tunnel motors on their roster, and there are also some tunnel motors that have been sold to leasing firms and are immediately leased back to UP, often with the only indication of the change being new reporting marks and “Union Pacific” lined out, number and colors unchanged.

Caught one in a 4 engine consist pulling a doublestack intermodal train out here in southern Arizona on the Sunset line. Couldnt cach the road number, but it was still marked for UP.
