Removing them I’ve not done, but I would say a small pin to similar item to pop out the old jewel would work.
To glue the new ones in I use the gel type crazy glue. It is a little easier to control thant the thin original stuff. All you need is a SMALL dab.

If it were me, I’d use a small drop of Walther’s Goo.
To remove one…well, I’ve never done that. I’d probably use a sharp X-acto knife blade, very carefully, so as not to damage the surrounding metal.
I removed one of my jewels by dropping the engine on the floor. [banghead] Only lost one. Fortunately no other damage. I just about went into cardiac arrest as it was headed toward the floor. Ordered a replacement and put it with a small drop of Elmers. Been a year and it seems to be holding.
I’ve also used regular Elmer’s white glue to hold replacement jewels in place.
I never tried to remove a jewel, but I like the idea mentioned above about using the point of an X-acto knife blade to try prying it up.

I would remove it with an Xacto knife and replace the jewel using gel type instant glue.
Walther’s Goo is what I have used. It never quite dries; and it’s kind of rubbery, to resist future shocks.
I have had great results with Crazy Glue. I have never removed one intentionally. I wold be real careful with the Exacto Knife but I can’t think of another way to do it.

Thanks for all the help. I used loctite gel Super glue. So far, so good.
