There’s an embarasment of riches for that period as most were such a vast improvement over current schemes where the primary consideration is cost (with the exception of BNSF). Assuming that you mean trains as opposed to engines; SP Daylight, GN Empire Builder, and IC Panama Limited

Anything with a wee bit of colour will do for me.

A couple of choices: Erie’s two-tone green passenger colors, BRC black and gray with yellow trim (the difference from today is in the details), Monon red and gray and IHB with the orange lightning stripe.
