If I were to start a topic, and someone were to post something that I’d rather not have there, can I delete that post, or maybe edit certain parts out? I’d like to know incase something like does happen in one of my topics.[:)]

Nope, only Bergie (moderator) can do that. You and I can only edit/delete what is ours.

And if someone else quoted your post in their message, it’s there for all to see until the other person changes it. You can still edit your own post, but the quote won’t change.
Just because you start a post doesn’t mean that the following thread of replies belongs to you. If we could do as you suggest, there would never be a dissenting voice heard at all.
If you want to be the moderator of your own posts, you will have to start your own forum.

Your question is understandable, but always remember that when we post topics, there’s always the possibility that dissenters, or even flamers and trolls will post their opinions. That’s the benefit and downside to a free forum and it should be appreciated.
But, If the thread does turn into a “Blowtorch, Torpedo Flame Fest”, then it’s best to contact Bergie at Forums@trains.com and he will decide to either:
(1) Leave the topic as is.
(2) Lock the topic.
(3) Delete it.
(4) Kick the member off of the forum if he or she is a persistent troller that deliberately enjoys insulting other members.
