For scale appearance, will I need to purchase one or two sets?
Also, do you insert one under each end of track?

Graduated or Elevated?
The trestles go between full length sections of track, or at least that is how they are designed. The Elevated Trestle set has metal ‘spacers’ that keep the trestles are the proper distance when used with straight track. I never got them to work with curves (the spacers).
The way the trestles are designed you would gain nothing with two sets, though a set of the all the same height ones would allow you to stay at grade for a bit. I believe the trestles are meant to be installed at each joint which gives a more than protypical grade. It may be possible to support/fasten more than one piece of track with bracing on the underside and put a support every other joint.
