- What size Plastruct motor would match best with Walthers Modern Conveyors?
- Are there any other motors that would match other than Plastruct’s?

I don’t think there’s any way other than to patiently search for example photos.
To my eye, the Plastruct motors look more like they belong on a Lego toy. I recently bought some from Steel Mill Modelers Supply. He also offers many parts for grain elevators and such. Here’s one example with a guard:
His motors are very nicely detailed, but a bit modern for my use:
You have to allow plenty of time to have the order filled, mine took about 5 weeks but it was worth the wait.

Search for photos then model what looks ‘right’ for you. Sometimes the conveyor ends in a ‘shanty’ where the mechanical stuff is protected from the weather and to give maintenance workers some protection. Yet others have all the ‘works’ exposed. Generally the motor and gearbox is on the ‘uphill’ side of the conveyor so the belt is ‘pulling’ the load. Stone or ore can be quite heavy so the mechanical systems will be equal to the task:

You could make additional gear or chain housings from styrene and the final drive would be centered on the main drive drum (usually at the top). Add electrical disconnects and motor control boxes with conduits, too.
Maintenance platforms and ladders would make a nice addition, too:
