I am going to have an elevated curved section on my layout, 8-10 feet that I was going to mount the track on plywood. Is there something I could attach on the sides of the plywood and maybe even underneath to dress it up?

Shelf edging would help or perhaps some of the various types of trim pieces you can find at Lowes or Home Depot. Another possibility would be a short-length skirt of material.
Boy, there’s so many possibilities! The easy way out would be an embankment, either stone or brick. Use card, paper or styrofoam and glue it top and bottom.
Another idea would be a series of arches and then you could have small businesses like car body shops or small engineering works using the space under the arches, thats a common sight in the UK around London where railway bridge arches get used for small businesses.
Or it could be a scenic break. You could glue a backscene to either side, say a town on one and country on the other and then add a few small buildings and some rocky outcrops, a grassy bank and a few trees to add depth to the illusion.
There’s so MANY ways to make that work for you but they all require a bit of modelling. I expect theres a ready made solution somewhere too but I can’t help you there.
I was thinking of some sort of plactic hobby trim that makes it look like metal. Seems like I have seen this look in pictures of others layouts.
