Welcome to the forum. Many people use Microsoft Excel for model railroad inventory. A google search for model railroad inventory mac turns up mostly Windows-only programs or suppliers long out of business.
If you don’t want to go with Microsoft Excel there are several look alike programs available.

First of all [#welcome] to the forums.
Any spread sheet program like Excel is a good one to make your own application for inventory. For MAC(OS) I use Numbers which is quite like Excel and easy to use.
I can mail you a copy of what I had developed if you send me a PM.
That’s been my experience. I’ve used Mac for years and I’d like one of the inventory programs, but I’ve never found one.
You could use Excel or similar program, but Database programs do have their advantages.
