I am Executive Chef for a major hotel but this year it was my first Ginger Village. It took us 200 hours to complete the 6 x 10 project. I add 50 # of Royal Icing, 80# of Assorted Candies, and made 200 trees. Please, enjoy the photos and Happy Holiday’s [C=:-)]
It hard to take it down on December 31st. I started to do it in October and the opening day was Dec. 1st. I be having alot of people putting their finger on the Royal Icing and tasting. When I come the next day I see alot of finger holes. Tomorow, I be filling the holes and putting more candies. I did made a few changes to the Royal Icing recipe. I added Lemon Juice and Black Pepper. [X-)]
Wait a minute–that’s Texas! They’re going to love that pepper stuff!
Some art is ephemeral, like snow sculptures, sand sculptures, and the colors of autumn leaves. But there is always a next time, and the artist gets to start anew! (Unlike quilts, which last forever…)

Had you used a little Tabasco, and some japalino peppers for effect,[C):-)] You’d have truly created a Texas 5 course meal! Anyway, the SP Daylight was a really nice touch! Hope no one trys to take a bite out of it![}:)]
